This fried rice is so incredibly quick and easy to make. It’s packed full of nutrients and gut boosting ingredients to help nourish your little one. You could also add another source of protein such as prawns or chicken if you wish!

Serves: 8-10 small serves
For: 6+ months once allergens have been introduced. Please choose your vegetables and prepare according to your child’s abilities.
Storage: in the fridge for up to 3 days, or in the freezer for up to 3 months.
Ingredients:
3 eggs, lightly beaten
400g cooked white rice
1/2 an onion
1 tsp minced ginger
1 tsp minced garlic
2 tbsp coconut oil
2-2.5 cups of chosen vegetables (we used zucchini, corn and carrot)
3-5 tbsp coconut aminos seasoning sauce
1 tsp bone broth concentrate (optional)
Steps:
- Heat 1 tbsp of oil in a large pan over medium heat. Add egg and cook until scrambled. Remove from pan and set aside.
- Add remaining tbsp of oil, ginger, garlic, onion and chosen vegetables. Sauté for approximately 5 mins or until soft.
- Add white rice, coconut aminos and bone broth (opt) and continue to sauté for approximately 2-5 mins.
- Add egg back in and mix until well combined.
- Remove from heat and allow to cool slightly. Serve desired portion size and place remaining portion into your Catchy silicone freezer pods for another day
